Last week's CSA pickup yielded a nice supply of cucumbers so yesterday we made a very summery salad with them (about the only summery thing we did on the 4th).
1 large tomato, seeded and chopped
1/4 red onion, thinly sliced
3 small cucumbers, halved lengthwise and thinly sliced
extra virgin olive oil
red wine vinegar
salt and pepper
Mix the vegetables in a bowl, drizzle generously with olive oil and add a few splashes of red wine vinegar. Season to taste, and let stand about 20 minutes to marinate. That's it. Go to it.
